Seoul kimchi is about clarity and balance. The flavours should be bold but not overpowering. The texture matters too. Vegetables should stay crunchy, not mushy. That crunch means they still contain the fibres your gut needs to stay clean and healthy as the kimchi travels through your body.
Kimchi can be usually quite salty and spicy, and in Korea, we are often advised not to eat too much of it because of its saltiness and spices. That’s why we make our kimchi differently: with only 1% salt and no added sugar.
To us, kimchi is a form of medicine, and the key to its healing potential lies in fermentation. To benefit from it fully, kimchi shouldn’t be too salty or sweet, Our Seoul style kimchi recipe is designed to support your gut health, not just excite your taste buds.
About Us
We’re a small team based in Bermondsey, London.
We call it gimchi, not kimchi. Why? Because that’s how it’s pronounced in Korean! While most people still spell it “kimchi,” we’re gently nudging the word back to its roots. So even if we go along with the common spelling for now, remember. It was us who started calling it gimchi in London, back in 2024.
We eat our gimchi every day (70g and try to eat first before the first meal) and we’ve seen first-hand how good it is for gut health, and that’s what drives us to keep making it.
